Week 1: Choux Pastry Essentials
Choux au Craquelin filled with Raspberry Diplomat Cream
Learn the foundations of classic French choux pastry and transform it into bakery-style choux au craquelin with a crisp brown sugar topping. You’ll make a silky raspberry diplomat cream and learn how to pipe, bake, and fill choux
Week 2: Puff Pastry Made Simple
Scotch Method Puff Pastry Apple Tarte Tatin with Chantilly Cream
Puff pastry using the Scotch (rough puff) method- faster, more forgiving, and ideal for home kitchens. Turn your pastry into a stunning apple tarte Tatin and finish with elegant chantilly cream quenelles.
Week 3: The Iconic Opera Cake
Classic French Opera Cake
Bring everything together in this final class with the French opera cake. You’ll build each component- from joconde sponge to coffee buttercream, chocolate ganache & glaze.

Important Information
- Please arrive 10 minutes prior to check-in.
- This class is strictly for 13+ years.
- We can accommodate a slightly younger baker if a paying adult is booked in the class as well but please check with us first.
- Dietary Requirements: We are unable to accommodate alternate dietary needs, but there are no nuts in the school’s recipes. If needed, we can provide a list of ingredients before the class

• Please wear comfortable clothing and enclosed shoes. Tie back long hair for safety.
• Bring a water bottle to stay hydrated.

Cancellation Policy
Due to ingredient, preparation and labor costs incurred in advance of the class, cancellation of attendance must be made a minimum of 24 hours in advance or payment becomes non-refundable. ded. Should the class chef be unavailable to conduct their baking class due to personal reasons or illness, all attendees for that class will be notified at the time. No-shows or last minute cancellations are not refunded
